This recipe is way too easy! Even if you burn microwave popcorn you’ll nail this recipe. This soup yields eight servings and stores easily, so it’s a great meal to make at the beginning of the week. On top of that, it’s super cheap. Enjoy!

Ingredients
2 cans black beans
2 jars salsa
¼ c. extra virgin olive oil
2 cloves garlic
2 Vidalia onions

Directions
Pour ¼ c. extra virgin olive oil into large pot

Dice 2 Vidalia onions

Mince 2 cloves garlic

Add Vidalia onions and garlic to pot

Place pot over med-high heat

Stir mixture until onions appear cooked

Add 2 cans black beans in their liquid

Add 2 jars salsa

Bring mixture to boil, stirring frequently

Once mixture is boiling, turn heat to simmer, place lid on pot. Let simmer for desired time.


Note: As cook time increases, liquidity of soup increases.
